Apple Peanut Butter Smoothie

Peanut butter spread on apple slices is not only a tasty snack, it’s also a delicious smoothie combination. This smoothie is made with green apples, creamy peanut butter, dates, banana, quinoa flakes and flaxseed, blended together with a plant-based milk.

Apple Peanut Butter Smoothie Ingredients

Peanut Butter: Any peanut butter will work just fine. However, I personally love Mayver’s Peanut Butter. It’s made in Australia from nothing but roasted peanuts and a pinch of salt.

Apples: I use green apple in this recipe, however you could also use red apple.

Medjool Dates: This particular variety of date adds a sweet and subtle caramel-like taste to this smoothie. As an added bonus, they are also rich in fibre, antioxidants and potassium. They are larger in size compared with other varieties of dates. I recommend chopping them into smaller pieces so they blend easier.

Quinoa Flakes: I use quinoa flakes in this recipe to ensure it is gluten-free. However, if you eat oats you could switch the quinoa flakes to oats, the recipe will work just the same.

Protein Powder: The ground flaxseed in this smoothie add some extra plant-based protein and healthy fats. You could also add a vegan protein powder to this smoothie to make it a bit more hearty (particularly if you’re consuming this as a meal or post-workout). I use a flavourless protein powder from Amazonia in my smoothies for a little extra protein.

Coconut Milk: Any plant-based milk will work but I recommend Pure Harvest Coco Quench coconut milk. It’s organic and made from a blend of coconut milk and brown rice.

Apple Peanut Butter Smoothie

If you don’t have a lot of time during the week, this smoothie is super simple to create for breakfast or a snack. If you’re more into meal prepping on the weekend, you could make a batch and freeze it into smoothie cubes. This makes it even easier to whip up during the week.

  • High-speed blender

Ingredients
  

  • 2 tbsp peanut butter
  • 1 green apple
  • 1 banana
  • 2 Medjool dates
  • 1/2 cup quinoa flakes
  • 1 tbsp flaxseed
  • 2 cups plant-based milk

Instructions
 

  • Combine all ingredients in a high-speed blender and process until smooth.
  • Serve as desired!
