This Pumpkin Pie Smoothie includes pumpkin, banana, coconut yoghurt, almond butter, cinnamon, nutmeg, ginger and allspice. Blend these ingredients up with a plant-based milk and you have a delicious smoothie that tastes just like pumpkin pie.
Pumpkin Pie Smoothie Ingredients
Pumpkin Puree: make your own by peeling and seeding a pumpkin, cutting it into cubes, and steaming the cubes in a steamer or colander set over a pan of simmering water for 10 minutes.
Ceylon Cinnamon: I use Ceylon cinnamon rather than the more common Cassia cinnamon. Ceylon compliments the smoothie with its milder, lighter and slightly sweeter taste. If you use Cassia cinnamon, I would recommend using half the amount in this smoothie (½ tsp). Cassia cinnamon is also a rich source of coumarin, which can be toxic in large quantities. If you regularly consume cinnamon, you might want to think about making the switch over to Ceylon Cinnamon.
Almond Butter: Any almond butter will work just fine. However, I personally love Mayver’s Almond Spread. It’s made in Australia from nothing but lightly roasted almonds.
Coconut Yoghurt: I recommend using Coyo Natural Coconut Yoghurt, it’s super creamy, is certified organic, and is full of beneficial bacteria from added Plant Powered Probiotics.
Coconut Milk: Any plant-based milk will work but I recommend Pure Harvest Coco Quench coconut milk. It’s organic and made from a blend of coconut milk and brown rice.
Protein Powder: The ground flaxseed in this smoothie add some extra plant-based protein and healthy fats. You could also add a vegan protein powder to this smoothie to make it a bit more hearty (particularly if you’re consuming this as a meal or post-workout). I use a flavourless protein powder from Amazonia in my smoothies for a little extra protein.
PREPPING AND STORING
If you don’t have a lot of time during the week, this smoothie is super simple to create for breakfast or a snack. If you’re more into meal prepping on the weekend, you could make a batch and freeze it into smoothie cubes. This makes it even easier to whip up during the week.
