This vibrant and sweet Pink Pitaya Smoothie tastes just as good as it looks. It features antioxidant-rich pink pitaya (also known as dragon fruit), blueberries, strawberries, banana, chia seeds and hemp seeds, and is blended together with a plant-based milk.

Pink Pitaya Smoothie Ingredients

Pink Pitaya or Dragon Fruit is the fruit of a cactus that originates from Central and South America, and South East Asia. This fruit has either a bright white or deep pink flesh and a sweet tropical taste. Pink pitaya is packed with essential vitamins and minerals, including vitamin C, vitamin E, magnesium, iron and antioxidants. It is also quite high in fibre.

I use blueberries and strawberries in this smoothie but you can use any type of berries that you have on hand. The berries can also be fresh or frozen depending on the season.

The added hemp seeds and chia seeds give the smoothie some extra plant-based protein and healthy fats, and you could also add a scope of vegan protein powder.

Any plant-based milk will work but I recommend Pure Harvest Coco Quench coconut milk as it’s organic and made from a blend of coconut milk and brown rice.

Pitaya Smoothie Ingredients

If you don’t have a lot of time during the week, this smoothie is super simple to create for breakfast or a snack. However, if you are more into meal prepping on the weekend, you could make a batch and freeze it into smoothie cubes to make it even easier to whip up during the week.

Equipment

  • High-speed blender
  • 1 cup
  • 1/2 cup
  • Tablespoon

Ingredients
  

  • 2 cups pink pitaya (dragon fruit)
  • 1/2 cup blueberries
  • 250 g strawberries (1 punnet)
  • 1 banana
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 cup plant-based milk

Instructions
 

  • Combine all ingredients in a high-speed blender and process until smooth.
  • Serve as desired!
